1 large pomfret
6 red kashmiri chillies
1/4 tsp cumin
5 peppercorns
1/2 tsp turmeric powder
4 flakes garlic
salt and sugar to taste and oil for frying
Wash and clean fish well.Slit on either side from end to end and apply salt.

Grind the rest of the ingredients in vinegar only.Do not use any water.

Stuff the pomfret with the ground masala on either side.Heat a frying pan,and oil and cover to heat till smoking.Put the pomfret in the hot oil an let it fry for a few minutes.Then cover the frying pan and cook for a few minutes.Remove the lid,turn the fish and cook on the other side for a few minutes till done.The skin should be crisp on either side.

When done,remove onto a serving plate,decorate with lemon wedges,potato curls and serve hot with plain rice.
